Today is International Tea Day and we'll be sharing with you a traditional Indian chai recipe. Many different versions are depending on which part of India you are from, this chai recipe is a typical Punjabi (North Indian) style tea - Punjabi's call it 'Cha'
Why Clay Pots?
In some parts of India, clay pots are still used for tea drinking. The porous nature of clay cups allows the aroma and flavor of the tea to develop fully, enhancing the fragrance and providing a more authentic and rich taste. Additionally, clay has natural insulation properties, keeping the tea warm for longer. After use, the cup returns to the earth, completing a cycle that connects the drinker to the natural world.
Tea For Two
1 tsp fennel seeds
4 cardamon pods
2 cloves
1/2 cinnamon stick
1 tbsp Jaggery (cane sugar)
1/2 cup milk
In a pestle and mortar add the fennel seeds, cardamon pods, cloves, and cinnamon stick. Crush together until the aroma is released. Add these crushed ingredients to a pan of water (around 500ml) and bring to a boil. Turn down the heat and let it simmer for a further 3 minutes. Add the jaggery and milk, turn up the heat, and bring to a boil (be sure it doesn't boil over) then simmer again for around 2 minutes. Using a mesh strainer, pour the tea directly into your cup.
